Dry beans like kidney beans and lima beans, dry peas like garden peas, chickpeas, black-eyed peas and lentils are all pulses. According to United Nations’ Food and Agriculture Organization (FAO), these types of crops harvested for their dry seeds.
The FAO says that pulses are an important part of human nutrition. In addition, the FAO even declared 2016 The International Year of Pulses. Most of all, this year-long campaign highlights how affordable, healthy, and nutritious they are. Furthermore, the FAO hopes to encourage more extensive planting of for greater food security around the world. As well as being good for humans, pulses and other legumes are ‘nitrogen fixers’ which add nutrients to the soil.
Versatile and easy to prepare, pulses can be used in a wide range of cuisines and dishes. Since they are so versatile, they are ideal ingredients for soups, salads, entrees, salads, breads and even some desserts. Most of all, cooking them takes about the same amount of time as it takes to prepare pasta and rice.
Because they are legumes, pulses are very nutritious. Consequently, they are a significant source of protein, carbohydrates, dietary fiber, antioxidants, vitamins and minerals. They are also low in sodium and cholesterol. Finally, they are perfect for people on gluten-free, vegetarian, diabetic, or weight control diets.
Most importantly, scientific studies show that regular consumption of has preventative effects. Consuming a one-cup portion of pulses daily may reduce LDL cholesterol levels and help lower blood pressure. As a result, eating them can help with metabolic disease. They also contain certain plant chemicals called ‘phytochemicals’. These can help lower the risk of some types of cancer and other diseases.
